Summary

DETERMINATION OF CONSUMERS’ DIETARY BEHAVIORS IN IZMİR

ABSTRACT: Nutrition is among the most basic needs for all individuals, and the factors influencing nutritional behavior are quite diverse. Consumers' individual characteristics and interacting factors determine their dietary behaviors. Identifying differences in dietary habits among consumer groups is important for understanding the reasons behind dietary behaviors. The primary aim of this research is to determine consumers' dietary behaviors in Izmir. Research data were obtained from face-to-face surveys conducted in 2021 with 166 consumers in the most populous districts of Izmir province. The sample size of the research has been calculated based on a 99% confidence interval and a 10% margin of error. Factor analysis was used to determine consumers' dietary behaviors and their fundamental dimensions. Cluster analysis was used to group consumers according to their dietary behaviors. As a result, consumers were divided into four segments based on the dimensions of "emotional overeating" and "slow eating" that were found to affect dietary behavior. According to the obtained segments, consumers were named as slow and emotionally overeating consumers (17.47%), slow eating consumers (31.33%), emotionally overeating consumers (36.14%), and slow and emotionally overeating negatively affected consumers (15.06%). It was determined that emotionally overeating consumers had a higher level of education and body mass index (BMI) values. Additionally, consumers who were under the influence of negative emotions in their diet were found to have a higher risk of obesity and related health problems. 47.59% of the surveyed consumers were above their ideal weight. Individuals with chronic illnesses tend to have a BMI above the ideal weight. However, according to the results obtained, there was no statistically significant difference in dietary behavior based on variables such as the age, gender, and employment status of the consumers. The research results especially indicate that emotional states such as anxiety and stress can influence consumers' dietary behavior.

Keywords: Dietary behavior, consumer segmentation, factor analysis, cluster analysis
