Summary

Natural based products are attractive alternatives to non-biodegradable materials in the production of new materials to improve packaging properties and extend the shelf life of products. The aim of this thesis is to formulate, prepare and characterize the mechanical, physical, barrier, thermal and morphological properties of alginate/pectin/gelatin based films containing different proportions of pomegranate peel extract (0%, 0.5%, 1%, 1.5% and 2%). As a result of the findings, a significant (p ≤ 0.05) increase was observed in the thickness, tensile strength and elastic modulus values of alginate/pectin/gelatin based films containing higher concentrations of pomegranate peel extract. On the other hand, with the increase in the concentration of pomegranate peel extract incorporated to the films, a significant decrease (p ≤ 0.05) was detected in the moisture content (%), water solubility (%), water vapor permeability, elongation at break (%) and light transmittance values gradually at all concentrations. The use of pomegranate peel extract (2%) improved the thermal stability by 8.24% and increased the decomposition temperature from 169.9 °C to 183.9 °C. SEM analysis showed that significant microstructural changes occurred with the incorporation of pomegranate peel extract. The thesis study demonstrated that environmentally friendly films based on alginate/pectin/gelatin containing pomegranate peel extract have the potential to be used as an alternative to traditional packaging.
