Investigation of Grape Wastes for a Viewpoint of Different Valorization Methods
Project no. 653 · Status: Kapanmış · 2017
Summary
One of the major problems of the food and agriculture industry, which is one of the largest and most important industry in the world, is wastes. It is thought that the food production and retail sector sends about 25% of the produced food to waste disposal areas. Due to the nature of agricultural and food wastes, each part is suitable for different ways of valorization. These wastes have the potential to be utilized in the production of another product, in the production of a new and value added product or in the production of energy as biomass, depending on the quantity and characteristics. As one of the most produced and consumed fruits in the world, grapes are mostly processed and various wastes such as seed, pulp, peel and stem come out. During the processing of grapes to wine, fruit juice, molasses and raisins, significant amounts of waste are generated. These wastes are important, because not only environmental problems but also they contain valuable nutrients for human health. Grape wastes occur in the parts of seed, peel and stem that are valuable wastes having different compositions. Although there are many studies on the evaluation of grape seed and pulp parts, studies on stalk parts are relatively limited. In this project, the stems of the grapes which is an important product for Turkey that is the 6th biggest grape producer country in the world were examined in terms of different valorization methods. In addition, the amount of stem and pomace wastes produced in the grape juice concentrate production line of a fruit juice factory of DİMES A.Ş., located in Sultanhisar, Aydın were determined and the percentage of these wastes to grapes were calculated.
