Determination of Drying Characteristics of Fruit Juice Production Wastes

Project no. 636 · Status: Kapanmış · 2015

Summary

Food industry is one of the world’s biggest industrial sectors. Waste disposal is one of the major problems facing most food processing plants. Raw materials used in the fruit processing industry are of agricultural origin. By nature, almost every part of an agricultural crop has useful. Turkey is the 6th largest peach producer of the World and a considerable amount of the harvested peaches is processed. Despite the importance of peaches, their pulp, seeds and kernels are mostly considered low-value agro-industrial residue. Peach wastes are rich in phytochemicals like phenolics and carotenoids that have high economic added value and they find many applications in food, cosmetic and pharmaceutical industries. In this project, peach pomace, which is a waste of concentrated peach puree production, was chosen as an example. This pomace was obtained from a fruit juice plant belonging to DIMES A.Ş. located in Sultanhisar province of Aydın and dried at 60 oC - 70 oC to 150 oC - 200 oC temperatures. Then, drying curves for peach pomace drying at different air temperatures was drawn.
