REMOVAL OF BIOGENIC AMINES BY MICROORGANISMS

Project no. 23782 · Status: Kapanmış (Yayın bekleniyor) · 2022

Summary

Biogenic amines are found in fermented foods, animals and plant cells, and are a toxic compound that causes poisoning when the limit consumption amount is exceeded. Biogenic amines are carcinogenic, toxic, psychoactive or vasoactive. Due to these properties, they are among the aromatic compounds known to be dangerous and they must be removed from the environment. In this thesis study, probiotic microorganisms isolated from previous studies were used to select microorganism cultures capable of biodegrading biogenic amine compounds and determine their degradation efficiency. Biodegradation activities were evaluated by HPLC analysis using Bacillus velezensis, Lactabacillus plantarum (Lactiplantibacillus plantarum-OR252329.1), and Bacillus coagulans (Weizmannia coagulansON482177.1 (MMB 104) isolated in the master's thesis "Obtaining effective microorganisms for odor removal in natural systems". As a result of the experiments, all of the bacteria used at 30oC showed an efficiency to completely degrade biogenic amines, histamine and sperm, and nearly 99% to cadaverine and B-phenylethylamine.
