PROTEİNCE ZENGİN GIDALARIN İN VİTRO SİNDİRİMİNİN (INFOGEST) PROTEOMİK VE PEPTİDOMİK ANALİZİ
Project no. 22816 · Status: Kapanmış · 2021
Summary
Mass spectrometry has become the techniques of choice for the simultaneous assessment of high numbers of molecules in complex matrices. They are therefore best suited for precisely monitoring the evolution of digestive processes in vivo or in vitro. However, due to the variety in equipment, techniques, statistical evaluations, and representations, it is difficult to select the best combination of these parameters. To generate an overview on state-of-the-art mass spectrometry data and highlighting analytical capabilities of specific equipment, we performed an inter-laboratory study with samples collected during in vitro digestion. Three different foods, skim milk powder, cooked TE breast and tofu were digested according to the static INFOGEST protocol with sample collection at different time points during gastric and intestinal digestion. Nine different laboratories received the samples and were asked to analyze them with their in-house equipment, sample treatment procedure, data evaluation methods, and graphical representation tools. The compiled results showed firstly in detail the protein degradation of the three different foods in the gastrointestinal tract and secondly which methodical and statistical approaches were best in representing the analytical data.
