DEVELOPMENT OF A FUNCTIONAL HIGH FIBER BAR BY USING POPPED BUCKWHEAT SEED

Project no. 1371 · Status: Kapanmış · 2018

Summary

The objective of this study was to develop a new functional snack bar with high nutritional value and rich in fiber as an innovative approach by using buckwheat grains. For this purpose, buckwheat seeds were popped by applying heat treatment and bar formulation has been developed by adding various ingredients to popped buckwheat grains. The protein content of buckwheat seed and popped buckwheat were 16.39 g/100g dry matter and 15.77 g/100g dry matter, respectively. An increase in the amount of total phenolic substances and a decrease in the amount of antioxidant activity and phytic acid were determined in popped buckwheat compared to untreated seeds. Soluble dietary fiber, insoluble dietary fiber and total dietary fiber concentrations of buckwheat seed were determined as; 3.19 g/100g dry matter, 6.32 g/100g dry matter and 9.51 g/100g dry matter, respectively. Soluble dietary fiber, insoluble dietary fiber and total dietary fiber concentrations of popped buckwheat were determined as; 4.38 g/100g dry matter, 5.25 g/100g dry matter and 9.63 g/100g dry matter, respectively. As a result of heat application, the amount of soluble dietary fiber of buckwheat increased. Rutin content of buckwheat seed and popped buckwheat were determined as 0.022 g/100g dry matter and 0.024 g/100g dry matter, respectively. Quercetin content of buckweat seed and popped buckwheat were determined as 0.016 g/100g dry matter and 0.009 g/100g dry matter, respectively. No statistically significant differences were found in the buckwheat seed and popped buckwheat for rutin and quercetin concentrations. ix Formulation of popped buckwheat bar was determined using ranking test by evaluating the samples according to sourness, buckwheat taste and aroma, flavor and general acceptability. The results showed that the popped buckwheat bar contains 13.35 g/100g dry matter protein, 4.86 g/100g dry matter soluble dietary fiber, 7.39 g/100g insoluble dietary fiber, 12.24 g/100g total dietary fiber, 45.58 mg/kg hydroxymethylfurfural, 13.27 g/100g total sugar and 73.03 g/100g dry matter carbohydrate. It can be concluded that popping of buckwheat seeds preserve nutritional value to a large extend and popped buckwheat may be a good and healthy alternative, as a different and innovative ingredient, to produce functional cereal bars with high nutritional value and consumer acceptance.
