Project no. 22145 · Status: Kapanmış (Yayın bekleniyor) · 2020
Summary

In this study, it was aimed to determine the initial quality and storage conditions of 16 species of fish, 1 species of mollusc and 1 species of crustacea obtained from cold storages in İzmir for 8 months during the fishing season, before being transferred to the retail chain.

The samples were obtained from cold storage and transported to the laboratory by cold chain. TMAB, TPB, TVB-N, TMA, TBA and pH analyzed were performed in all samples. In addition, histamine analysis was performed in fatty fish species. Hygiene analyzes were carried out with the help of a ready kit from the boxes containing the samples. The findings obtained at the end of the study were evaluated statistically.

The chemical and microbiological analyzes carried out throughout the study were evaluated. Although, samples were found to be available for TVB-N and histamine, whose legal limits were specified, the high values of TMAB, TPB, TBA and TMA were found for some species. This conclusions indicating that correct and adequate cold storage was not applied after the fish were caught and during their transportation to the warehouses. In addition reveals that the boxes used are insufficient in terms of hygiene.
