THE EFFECT OF MONOLAYER PACKAGING MATERIAL ON THE QUALITY CHARACTERISTICS OF EXTRUDED SNACKS
Project no. 32627 · Status: Kapanmış (Yayın bekleniyor) · 2025
Summary

Extruded corn-based chip products are sensitive to oxidation and moisture due to their low moisture and high fat content considering the chip production applications. In this study, the effects of transparent BOPP and metallized BOPP monolayer films on product stability were compared in extruded corn chips packaged in a modified atmosphere with nitrogen gas.

Samples were packaged under modified atmosphere conditions using a packaging device in laboratory scale with nitrogen gas and analyzed on days 0, 15, and 30. Lipid oxidation of chips were determined using the Thiobarbituric Acid Reactive Substances analysis, the headspace gas composition was measured by headspace gas analysis, and moisture content was determined for each storage days.

In conclusion, properties of packaging directly affect the quality performance of extruded snack products. It was demonstrated that metallized BOPP film protects product quality more effectively than transparent BOPP for extruded snacks.
