Production of bee polen based functional fermented product by different biotechnological strategies

Project no. 22369 · Status: Kapanmış (Yayın bekleniyor) · 2021

Summary

Bee pollen (or bee collected pollen); A product obtained by pollen collected by bees from different plants by using saliva, nectar or honey to form pellets with a diameter of 1.4-4 mm.

In this study, bee pollen samples were firstly subjected to fermentation under controlled conditions by using 19 different lactic acid bacteria. Three cultures that gave the best response to the determined criteria were chosen for the next step. In the second production stage, the effects of the products obtained in the presence of different lactic acid bacteria and different carbon sources (glucose, fructose, lactose, galactose and honey) on bioactive components were determined. For this purpose total phenolic content, total flavonoid content and different antioxidant activities analyses were performed after fermentation. Analyzes of phenolic compounds were completed by UPLC/MS-MS method.

Lactococcus lactis ATCC-11454, Leuconostoc mesenteroides and Leuconostoc mesenteroides subsp. Jonggajibkimchii were determined as the best performing cultures during the fermentation process. The highest acidity values during production were determined in the sample (5,04% lactic acid) produced by the use of Lactococcus lactis ATCC-11454 culture and the addition of glucose. According to the results, the best results in terms of total phenolic substance and antioxidant activity (ABTS) values were determined in the samples where glucose or fructose carbon sources were used and Lactococcus lactis ATCC-11454 and Leuconostoc mesenteroides subsp. jonggajibkimchii cultures were inoculated.

Considering phenolic acids, the trans-cinnamic acid was found in higher concentrations (731.0581 ng/ml) in the samples produced by Leuconostoc mesenteroides culture in the presence of galactose/fructose compared to the raw samples. Catechin, as an another important phenolic compound, was found to be at higher concentrations (1611.7206-130,8538 ng/ml) in the samples produced by cultures of Leuconostoc mesenteroides subsp. jonggajibkimchii/Lactococcus lactis ATCC-11454 in the presence of fructose/galactose compared to the crude samples.

It has been revealed that different lactic acid bacteria and different carbon sources used during the fermentation of bee pollen have positive effects in terms of bioactive content of obtained products.
