Summary
In this study, the possibilities of using E. faecium and E. faecalis strains in probiotic yoghurt and probiotic milk drink production which have probiotic and functional properties and which will not cause human health problems have been investigated. In literature reviews, Enterococcus species showing probiotic properties were not found in dairy products. Many of these studies are related to their use as support cultures in cheese production. However, the fact that studies on the use of yoghurt and probiotic milk in the production of milk are limited and very few, besides the fact that details about their properties are not entered. As a result of the study, no adverse effects of probiotic milk drinks and yoghurts containing Enterococcus were observed.
