ZINC BIOFORTICATION OF MICROGREENS
Project no. 23482 · Status: Kapanmış · 2021
Summary

Insufficient or suboptimal dietary intake of zinc (Zn) represent a latent health issue affecting a large proportion of the global population, particularly among young children and women living in poor regions at high risk of malnutrition. Agronomic crop biofortification, which consists of increasing the accumulation of target nutrients in edible plant tissues through fertilization, has been proposed as a short-term approach to develop functional staple crops and vegetables to address micronutrient deficiency.

The study aims to evaluate the biological enrichment potential of some microgreens belonging to the Brassicaceae family through enrichment with Zn. The yield and zinc nutrient concentrations of cauliflower, broccoli and cabbage microgreens grown with nutrient solution added at different doses of zinc sulfate (0, 5, 10, 20 mg/l) were determined.
