Determination of the effects of depuration process in black mussel (Mytilus galloprovincialis)

Project no. 1185 · Status: Kapanmış · 2016

Summary

In this study, changes in meat yield and biochemical compositions such as protein lipid glycogen and glusid were investigated by subjecting individuals of the economically importance shellfish species of black mussel (Mytilus galloprovincialis) harvestable size to depuration process for 72 hours. At Kocaman Fisheries Company, located in the province of Bandırma - Balıkesir, was carried out at depuration plant and the mussels were sampled for 3 days in the depuration tanks. As a result of the study, the meat yield of mussel decreased from 22.4 % to 17.53 % in the spring season and the meat yield of black mussel was found 17.5 % at the beginning (0 hours) of the experiment and 16.33 % after 72 hours in autumn. The value of protein in the mussel was measured 44.39 % in spring and 41.99 % in autumn at the beginning of study. The protein value of mussel in the end of experiment (72 hours) was found 38.65 % in spring and 38.02 % in autumn, respectively. At the end of the experiment, the lipid values were determined 4.89 % in the spring and 5.81% in autumn. The amount of glycogen in the spring decreased from 10.13 % to 9.57 % and the content of glycogen in the autumn reduced from 8.81 % to 7.89 %. The decrease in the meat yield and biochemical contents of mussel was not found to be statistically significant (p>0.05). The amount of total coliform bacteria was 170 MPN/100g in before depuration treatment, and also it was found 90 MPN/100g and 20 MPN/100g in 24th and 48th hours, respectively. However, it was not detected any coliform bacteria in 72th hours.
