Production of healthy snacks with roasted beech hazelnut (Fagus orientalis L.) powder and olive paste, prepared using different techniques.
Project no. 32595 · Status: Kapanmış (Yayın bekleniyor) · 2024
Summary

The Oriental beech (Fagus orientalis L.) is a deciduous tree native to Türkiye. The fruit of this tree is known as “beech mast,” which is essentially a type of seed. This fruit, also referred to as beech nut or beech chestnut, is known to be rich in oil, protein, and minerals and to contain higher amounts of protein and fat compared to many other nuts. However, the lack of studies on the utilization of this plant seed is noteworthy.

Considering this gap in the literature and current trends in functional food production, this project aims to produce a healthy snack enriched with beech nut powder and olive paste, both characterized by high protein content and valuable fatty acid profiles. For this purpose, the nutritional composition of beech nuts will first be evaluated. Subsequently, the nuts will be roasted using three different methods (traditional, microwave, and hot-air (air fryer) roasting), ground into powder, and used in the production of healthy grissini.

The physicochemical, textural, and sensory properties of the produced grissini will be evaluated. In this way, the effects of currently popular processing techniques on quality characteristics will also be determined. The utilization of foods rich in valuable components in various forms for the production of functional products is expected to provide significant benefits.

Therefore, it is anticipated that the grissini produced using roasted beech nut powder, which is high in protein, and olive paste, a nutritionally and health-wise important olive product, will attract attention and be preferred by consumers of all age groups. Especially with the growing popularity of healthy snacks today, both producers’ and consumers’ demands are increasingly oriented in this direction. With changing living conditions and the rising demand for conscious food consumption, the planned product is expected to enhance competitiveness and contribute to the national economy. Moreover, the valorization of beech nuts that grow in Türkiye but are underutilized and often lost due to natural shedding is of great importance.
