ANALYTICAL METHOD DEVELOPMENT FOR THE AUTHENTICITY CONTROL OF FOOD OF ANIMAL ORIGIN
Project no. 22647 · Status: Kapanmış (Yayın bekleniyor) · 2021
Summary

Food of animal origin and related products play significant roles in human nutrition. However, fraud in this food sector is a major problem due to the potential risks to public health and negative economic impacts. Therefore, the development of analytical techniques to detect fraud and verify the authenticity of such products is of vital importance. Literature research has shown a gap in reliable data banks regarding the origins of animal foods in our country. This study aims to compare various types of fish grown in fish farms with the same type of seafood, naturally raised chickens with commercial chicken brand products and unprocessed natural and organic milk with commercial milk brand products.

For this purpose, the isotope ratios of these animal products were determined by isotope ratio mass spectrometry (IRMS), the 13C/12C values for carbon, the amino acid contents were determined by the high-performance liquid chromatography (HPLC) method, and the fatty acid profile was determined by the gas chromatography (GC) method. The relevant data were evaluated statistically, and it was shown that discrimination between the samples can be made with the help of Principal Component Analysis (PCA). In this way, in addition to the origin analysis of food products, information was also obtained about geographical location and nutrition types. In addition to these analyses, the electrochemical analysis conditions of electroactive amino acids were also examined.
