Investigation of Kokumi and Umami Active Dipeptides by Vibrational Spectroscopy and Molecular Modeling Techniques
Project no. 24042 · Status: Kapanmış (Yayın bekleniyor) · 2022
Summary

The main purpose of this project is to examine chosen dipeptides of kokumi and umami tastes with vibrational spectroscopy (Infrared (IR) and Raman spectroscopy), molecular modeling and molecular docking techniques, and to determine the mechanisms by which these dipeptides bind to taste receptors and the residues that the binding occurs and to reveal the mechanism that they interact with these residues. By doing this, this study is aimed to determine the mechanisms of the structures, for the first time in literature by using both vibrational spectroscopy, and molecular modeling methods as complementary techniques to each other and revealing the mechanism to an advanced level. Thus, it is expected to contribute one step further to explaining the interactions between of the dipeptides and their receptors.
