Investigation of the Use of Okra Polysaccharides in the Production of Edible Film

Project no. 21159 · Status: Kapanmış · 2019

Summary

The purpose of this study is; investigation of polysaccharide extraction from okra fruit and the use of the obtained polysaccharides in edible film production. In the first stage of the study, polysaccharides extracted from fresh okra were ground and powdered after freezing and drying. Edible film was obtained by adding whey and glycerol to okra polysaccharides. The polysaccharide content and Fourier Transform Infrared spectrum (FTIR) of the polysaccharides obtained were determined. In order to determine the properties of films containing different rates of okra polysaccharide, film thickness, water vapor permeability and roughness measurements and FTIR analysis were performed; thermal and morphological properties were investigated. When the obtained results are evaluated, it is seen that edible films obtained from okra polysaccharides have the potential to be used in the food industry.
