Summary
Trans-resveratrol is the powerful antioxidant which is found in grape, pineapple and peanuts. However trans-resveratrol is in the waste of these food products. And why it is important to use these wastes. The challenge in this process is isomerization of trans resveratrol. Low stability and bioavailability of trans resveratrol are one of the most important disadvantages of the usage of trans resveratrol. In order to eliminate these disadvantages encapsulation of trans resveratrol by using complex coaservation was proposed. The obtained encapsulates were increase the stability and shelf life of trans resveratrol.
