Project no. 1045 · Status: Kapanmış · 2015

Summary

In this study, the technical infrastructure, economic, marketing structure and problems of the trout (Onchorynchus sp.) fumigation processing facilities that has an important export market are investigated. Ten fumigation processing firms located in the Marmara, Aegean and Mediterranean regions of Turkey were visited and face-to-face surveys conducted with the directors. According to the obtained data, 40% of the enterprises are joint stock companies and 70% of the facilities are privately owned. 70% of the enterprises are also engaged in trout farming, energy production and feed production except processing. The establishment capacities of firms are between 100-2400 tons, while the capacities of 2015 are between 150 tons and 3000 tons. 8 firms use more than 50% of their capacity, 2 firms use 30-50% capacity. While all of the processing firms use fish as raw materials, two firms also process crustacean, caviar, octopus and calf. Trout for fumigation processing is provided entirely from Turkey. All firms are producing smoked trout. Besides these, 8 firms process fillet, 1 firm canned fish, 7 firms frozen products and 4 firms produce brine and pickled. It has been determined that the primary investment financings of the firms are 69% from their own resources, 23% by bank loans and 8% by state incentives. 70% of the firms are marketing smoked trout to foreign countries. The main expenditure items of the firms are gathered as personnel, raw material transportation, product distribution, disinfectant, fuel, general consumption and energy expenditures. Personnel expenses constitute an average of 57% of the total costs of the firms. The share of energy expenditures in the total cost was 20% on average. While the increase in raw material prices, low demand in the domestic market, high profit shares of the intermediary companies and high competition create problems in the domestic market, customs, logistics and the excessive legislation for permits to export their products are the main problems for export market. The joint request of all firms focuses on incentives for processing facilities, increasing grant and credit facilities and financing support for investment.
