Summary

One of the most important problems in the food industry, both globally and in our country, is food waste. Considering the pollution it causes, the depletion of natural resources, and its economic and social harms, the effective management and reevaluation of food waste is important for sustainable development. In line with the European Commission's directives on waste and environmental sustainability (1999/31/EC and 2008/98/EC), food businesses are trying to reduce the environmental impact of wastes and by-products in their production activities. Due to the increasing world population and depleting natural resources, efforts are now being made to evaluate every waste from both an economic and environmental perspective. Today, with changing lifestyles and the increase in health-conscious consumers, the tendency toward alternative diets has also increased. In this context, there is a rapidly growing demand for dairy products enriched with plant-based proteins within the category of newly developed food products. Dairy products contain low concentrations of phenolic compounds, antioxidants, and fiber. In addition, it is an established fact that fruits and even fruit seeds are rich sources of phenolic compounds and antioxidant activity. Fruit waste can cause environmental pollution by releasing nutrients or toxic chemicals into the soil and can provide a platform for the reproduction of vectors that cause various diseases. Therefore, the recycling of fruit waste and its processing into products with particularly high added value as functional food ingredients is important for waste management and sustainability. Within this framework, enriching fermented dairy products with non-dairy ingredients emerges as a good option for improving the functional and bioactive properties of final products. In addition, the popularity of synbiotic yogurts obtained by adding components with prebiotic effects to probiotic-containing yogurts is gradually increasing. In this context, evaluating fruit seeds with prebiotic effects and using them in the production of high value-added probiotic yogurts is economically important, while functional yogurts enriched with pumpkin, watermelon, and avocado seed powders, which have high protein content and antioxidant activity and are known to have numerous health benefits, are also important in terms of meeting consumer demand. In addition, it is thought that probiotic yogurt to be produced from goat milk enriched with the specified seed powders will also make a significant contribution to the functional product market.

Since the seed powders to be added have high protein content, their effect on the quality of the yogurts will be examined. In this context, in addition to physicochemical analyses in probiotic yogurts, hardness and water-holding analyses as well as color analysis will be performed. Furthermore, determining the effect of pumpkin, avocado, and watermelon seed powders, which are stated to have prebiotic effects, on the viability of B. longum and L. casei probiotic bacteria and revealing how different fruit seed powders will affect the antioxidant activity of probiotic yogurt will provide new information to functional food science. The project is planned to be completed in 18 months.

Our project is directly related to the topic of "bioprocess and fermentation technologies" under the heading of Biotechnology among Ege University's priority areas; to "food quality" under the heading of Sustainable Agriculture and Food Technologies; and also to "recovery of wastes and production of high value-added materials" under the heading of Sustainable Innovative Environmental Technologies and Applications.
