EFFECT OF BIOPOLYMER BASED FILM ENRICHED WITH COFFE PULP EXTRACT ON THE QUALITY OF TURKISH COFFEE
Project no. 32561 · Status: Kapanmış (Yayın bekleniyor) · 2024
Summary

In this study, the usability of sodium alginate-based films enriched with coffee pulp

extract for packaging Turkish coffee and their effects on the quality of Turkish coffee were

investigated. As an approach to reducing food waste, the addition of coffee pulp extract to

sodium alginate films aimed to enrich the film content. In the study, the extraction of phenolic

compounds from coffee pulp was carried out using the ultrasonic-assisted extraction method.

The coffee pulp extracts were analyzed for total phenolic compounds, antioxidant activity and

total flavonoid content. In sodium alginate (2%, w/v) films and sodium alginate-based films

containing 0.5% (v/v), 1.0% (v/v), and 1.5% (v/v) extract, film solubility, film thickness, light

transmittance and opacity, color, elongation at break, tensile strength, total phenolic content,

antioxidant activity, scanning electron microscopy (SEM) imaging and Fourier transform

infrared spectroscopy (FT-IR) analyses were performed. In the optimization study carried out

on the films using the response surface methodology, the extract ratio (%) was selected as the

independent variable within the scope of a single-factor Optimal Custom design. Total phenolic

content (mg GAE/g), antioxidant activity (%), and opacity at 600 nm were evaluated as

dependent variables. As a result of the optimization, the most suitable formulation was

determined to be the sodium alginate film containing 1.5% extract. Moisture, protein, total

invert sugar, and fat contents were analyzed in Turkish coffee. During storage analyses were

performed on specific days (day 0, day 5, day 10, day 20, and day 30). The analyses were

applied to three product groups: the control group (unpackaged coffee), coffee packaged with

sodium alginate film, and coffee packaged with sodium alginate film containing 1.5% extract.

During storage Turkish coffee was analyzed for pH, weight change, water activity, color,

solubility time, total phenolic content, total flavonoid content, antioxidant activity, analysis of

caffeine and phenolic compounds by the HPLC method (days 0 and 30) and sensory properties

(days 0 and 30). As a result, it was determined that the edible film enriched with coffee pulp

extract was effective in reducing quality losses in Turkish coffee during storage.

Keywords: Edible film, sodium alginate, coffee pulp extract, food waste, Turkish coffee,

packaging
