Summary
<p>In this study, the probiotic properties of 95 yeast isolates isolated from different sources were investigated. It was investigated whether all isolates had antimicrobial activity against bacterial and fungal pathogens. The tolerance of gastrointestinal conditions was tested using yeast isolates with broad spectrum antimicrobial activity (AS11, ASZ 21, BPK 11, BPK 12, BPK 13, Çis 12, Çis 16, Et 11, Kefir 12, Kefir 22). Yeast isolates with high antimicrobial activity, resistance to simulated gastric juice and bile salt resistance (ASZ21, BPK11, BPK12, BPK 13, ET11, KEF 12 and KEF 22) were investigated whether they have antioxidant activity and finally autoaggregation and hydrophobicity tests were performed. As a result of these tests, the ET11 isolate with the best probiotic properties was identified as <em>Pichia manshurica</em>.</p>
