PROTEIN HYDROLYSATES FROM CHLORELLA SOROKINIANA MICROALGAE CELLS: CHARACTERIZATION, NUTRITIONAL AND BIOLOGICAL PROPERTIES

Project no. 22134 · Status: Kapanmış (Yayın bekleniyor) · 2020

Summary

This study evaluated the digestibility and bioactivity of protein hydrolysate obtained from heterotrophically cultivated Chlorella sorokiniana microalgae. Various cell disruption methods were applied to enhance protein extraction, and low-molecular-weight peptides were obtained by enzymatic hydrolysis. The hydrolysates were assessed before and after in vitro digestion for biological activities such as DPP-IV inhibition, acetylcholinesterase (AChE) inhibition, and bile acid binding capacity. Results demonstrated improved protein digestibility and significant DPP-IV and AChE inhibitory activities, as well as high bile acid binding capacity. These findings highlight the potential of Chlorella sorokiniana as a functional food ingredient.
