Özet

Gelatin-derived peptides obtained through enzymatic hydrolysis have emerged as promising bioactive compounds with notable anti-aging effects. These peptides, rich in glycine, proline, and hydroxyproline, exhibit various biological properties such as antioxidant, anti-inflammatory, and skin-regenerative activities, making them valuable in nutraceuticals, cosmeceuticals, and medical applications. This review systematically analyzes the current state of research on the generation of gelatin peptides via enzymatic hydrolysis, with emphasis on enzyme specificity, processing conditions, and peptide characterization. It explores the molecular mechanisms underlying their anti-aging effects, including stimulation of collagen synthesis, inhibition of matrix metalloproteinases (MMPs), and modulation of oxidative stress pathways. Furthermore, the review critically evaluates in vitro, in vivo, and clinical studies highlighting their therapeutic potential in skin aging, joint health, and age-related metabolic disorders. Finally, it discusses the regulatory, safety, and formulation considerations necessary for commercial application.
