Özet
<p>An Investigation on the Some Chemical Properties of Probiotic Yoghurts</p><p> In the research, probiotic yoghurts containing Bifidobacterium animalis or Bifidobacterium longum were manufactured by addition of skimmilk powder as control or fructooligosaccharide. Some chemical properties of yoghurts including the content of dry solids, fat, lactose, glucose and galactose and acidity were examined during 28 days of storage at 4 o C. Probiotic yogurts containing fructooligosaccharide had lower content of lactose, glucose, galactose as well as acidity than those found in control yoghurts.</p><p> Keywords: B.animalis, B. longum, Probiotic yoghurts fructooligosaccharides <br></p>
