Özet

Eggs are a fundamental food source in human nutrition due to their high-quality protein content, rich composition of vitamins and minerals, and high digestibility. Parallel to the increasing global production and consumption of eggs, substantial quantities of eggshell waste are generated both from table egg consumption and hatchery operations. The prevention of the environmental impacts posed by these biological wastes, which contain calcium carbonate along with trace amounts of various minerals, and their conversion into value-added products, are of great importance for sustainable production and effective waste management. In this study, the structural characteristics of chicken eggshells were reviewed and current research on their utilization in different sectors was examined. Evidence from the literature indicates that eggshell powder has been investigated in the health sector as a highly bioavailable calcium source, particularly in studies focusing on bone health, dental remineralization,

and the development of biomaterials. In the food industry, eggshell powder has been incorporated into various products to enhance calcium content, and several studies report that appropriate inclusion levels can improve nutritional value without adversely affecting sensory properties. Research conducted in the agricultural sector further demonstrates that eggshell powder can function as a natural protective material against storage pests and contribute to the preservation of grain quality during storage.

Additionally, investigations on its application as a filler material and biomaterial in different industrial processes highlight the economic value of this by-product. Overall, the valorization of eggshell waste across health, food, agricultural, and industrial applications represents an integrated approach that contributes to environmental sustainability while generating added value.
