Özet

In this study, anthocyanin extract obtained from black carrot was incorporated into thermoplastic polyurethane (TPU) nanofibers via electrospinning to develop pH-responsive nanofibers for intelligent food packaging applications. Fresh chicken meat was packaged with anthocyanin-loaded nanofibers and stored at 4°C. Over the storage period, the nanofibers changed color from red to blue, indicating deterioration. The produced nanofibers exhibited distinct color changes in response to pH variations caused by volatile compounds released during meat spoilage. This simple, low-cost, and natural approach offers an eco-friendly alternative to synthetic indicators for real-time monitoring of food freshness and can contribute to reducing food waste while ensuring consumer safety.
