Özet
The antimicrobial effects of nisin, it's application in fresh and processed fish.Nisin is a bacteriocin produced by certain strains of Lactococcus lactis.In recent years, it has been used succesfully in a wide variety of food products as a food preservative.In this presentation, structure, mode of action, antimicrobial properties of nisin and its application in fresh and processed fish were reviewed.
