Özet
This chapter focuses on the origin, geographical distribution, physiological and morphological characteristics, chemical composition and cultivation of bay (Laurus nobilis) in Turkey. Information on the postharvest handling, processing and uses of bay in the pharmaceutical and food industries are also presented.
